Five Things I'd Like To Do This Spring

It is spring. Here are a few things I’d like to do this spring!

Countryside Kitchen, Mahopac, NY

I’ve seen some VERY good looking pancakes on Instagram made at Countryside Kitchen in Mahopac, NY. Countryside is the self described “Home of the Famous Holy Cannoli Pancake.” YES. I already asked a local her opinion and was told that these  are INDEED very good pancakes. 

And what’s better than eating a yummy griddle item on a gorgeous outdoor patio? Yup, Countryside has that, too. So I will very much be visiting and chowing down this spring. 

Waterline Square Park, UWS, NY

A cool new Manhattan park and playground opened in May 2020, while we were all in lockdown and just about the time all NYC playgrounds were closed. As part of a luxury residence, Waterline Square Park includes an interactive water feature and a shiny new playground with rock formations, netting and steel slides. We will most definitely spend a nice spring day there soon!

Sea Life Aquarium at American Dream Mall, East Rutherford, NJ

After being much delayed due to COVID, Sea Life Aquarium will finally soon open at New Jersey’s American Dream Mall. This immersive, cutting edge version of the usual aquarium will feature, among other amazing things, New Jersey’s ONLY underwater ocean tunnel, a Tiny Giants Touch Pool and over 3,000 sea creatures. Preview tickets are available now and a May 4th opening day was just announced!

The Macy’s Flower Show, Midtown West, NY

I’ve been going to Macy’s NYC Flagship Store since I was a little kid to visit Santa in December. But I have never been to Macy’s spring Flower Show in its 70+ years of existence. This is the year that finally changes! After a hiatus for 2020, the Flower Show is BACK for 2021 and it’s called A Floral Celebration of Fortitude. This fragrant, floral ode to springtime will be on view from May 2nd to 16th at Macy’s Herald Square. Stay tuned for more details. I’m so excited!

The cove, norwalk, ct

Heading over to the Norwalk Cove Marina area is not a new activity for our crew (see blog post from July 2018). But it certainly is a MUST DO activity for our crew once the weather starts to warm up.

A visit to this small but super quaint part of waterfront Norwalk is an instant spring pick-me-up. Here, you feel far away from the hustle bustle of every day life and transported to a picturesque seaside town. There are a bunch of mostly seafood oriented spots over here and I still haven’t tried them all. But without a doubt, my favorite warm weather day in CT is a lobster roll meal and crisp IPA at Knot Norm’s, then walking just one block walk over to Mr. Frosty’s for ice cream. Both spots are in the heart of the Cove.
